Homemade creamy vanilla ice cream on cream and milk
For the homemade ice cream cake which I produced for our New Year's menu should use a vanilla ice cream, and when now the happy owner of an ice machine and happy to stand in the kitchen, it's a pleasure es degan to be able to make his own. My method and the recipe is as follows.
You will need the following ingredients: 6 pasteurized egg yolks 200g sugar 4 cups low-fat milk 4 dl whipping cream 4 vanilla beans (I used bourbon vanilla from Madagascar from my vaniljestangs online bulk purchases)
The egg yolks and sugar (now vanilla sugar) are pooled and stir thoroughly either KitchenAid machine or with hand beater. Then pour cream and milk in a pot together with the emptied vanilla beans and warmed up to quiet the mixture is boiling, stirring continuously. So turn off the burner and the mass to cool. Make sure that they still stir in cream / milk mass while it cools so as not to get skin on. When it has cooled slightly to vanilla bars again taken up, and cream-milk mass flask slowly into the bowl with the touched together sugar and eggs while again whipped.
So I poured it all back in the pot and turned on the heat on the lowest strength while I was by touch. After some time you will be able to sense how the whole mixture is beginning to thicken and become delicious creamy in consistency. From here it was just to turn on the ice machine and let it cool down while the hot mixture was allowed to cool for about 30 minutes before it went into the now cold ice maker. My icemaker, es degan a Gaggia Gelateria, is not quite big enough to run the entire ice mass in a time around, so I drove the two laps and poured it after each time the tray that came in the freezer.
